I hope you are having a nice weekend. It was Australia Day here yesterday, and today we skipped going into town with friends for some drinks (we're both so tired) and stayed home to watch films and take it easy. I made some lemon mousse, and as I have my Nikon back at last, I wanted to have a play to get used to it again. This lemon mousse is a variation on a Nigella recipe, and the salted pistachios, lemon-soaked strawberries and torn mint confetti is a pretty good combination, especially on this unusually cool summer day. I seem to have made rather a lot, though, so maybe I should ask our friends to come round to help us finish it?

Mmmmh! That looks delicious. Red, white and green is also a very dainty colour combination. I must make a similar dessert when we have fresh strawberries again in some months.

Sway : of course, they're based on the vanilla mousse recipe on the Nigellisima app and I just changed a few small things :) I want to try a blogger's rec. of pepper syrup (they posted it on instagram) so I might just be doing this again soon, and will include the recipe :)
